Shitaki takes a while to start pinning and fruiting. Most of the work is done for you already 🙂

Take off the whole bag once when you see the mushrooms pinning out (little bumps see above picture) or the block has turned almost all brown before pinnings show up.

Often it turns brown before pinnings happen. Leave it in cool shady place and apply moisture/mist to it at least twice a day.

You may need a knife cut off from the bottom of root.

After each harvest, let it rest for one week, then soak in cold water for 24 hours (less hours in summer and more in winter).

Additionally, you can leave it in fridge for one day after soaking. Repeat this soaking (and cold shock) after each flush.

You can harvest  two or three times and even more.
